Summer fruit salad with a herby dressing

The Moulsford salad bar is beloved by staff, but equally loved by the boys. You might be surprised to hear that many of the boys stop off for a spoonful of healthy salad on their way to sit down at their tables.  Lou is famous for her bright and tasty dishes so we thought you might want to try one at home.

 

Ingredients (serves 4)

½ Small radicchio lettuce

1 Yellow pepper (deseeded and thickly sliced)

2 small gem lettuce

1 small red onion (thinly sliced)

200g mixed salad leaves

Handful mixed summer berries

150g cherry tomatoes

 

For the herby dressing

1 tbsp chopped fresh Mint and fresh Parsley

1 tsp Dijon mustard

200ml extra virgin olive oil

Juice ½ lemon.

 

Method

1. Wash the lettuce leaves, tear into bite-size pieces and shake until dry

2. Mix the leaves and place in a large salad bowl, top with the tomatoes, sliced peppers, onion and summer berries

3. Place all the dressing ingredients in a bowl and whisk well to combine.

4. Spoon the dressing over the salad before serving. If you do not fancy the berries you could always substitute them with a mix of sliced baby sweetcorn , cooked green beans and baby carrots, this would add a different colour and texture to the salad.
